Who loves eggplant?
I was thinking about what meal to prepare today, and I've been craving to make this recipe "tortang talong" since last month. I imagined putting a lot of toppings, and I want it to be tasty. So, an eggplant omelet is a good choice for brunch. It's a simple and budget-friendly recipe, so everyone can make it at home. Let me share with you the step-by-step process on how to cook it. So let's do it!
I prepared all the ingredients. The ingredients are the following:
five pieces of eggplant, medium size
1/4 bunch of green onions
pepper (ground )
four cloves of garlic
one onion
one big tomato
two eggs
First, wash everything thoroughly or soak it in water with baking soda for two minutes. Place the eggplants in a pot. Boil it until tender. I didn't roast them because it takes a lot of time and effort. Although roasting them is tastier.
After boiling, place them on a big plate. Smashed them one by one.
Crack the eggs and drop them into a bowl. Add salt and pepper to taste.
Whisk the eggs until they're even in color.
Soak the eggplant in beaten eggs. Arrange the toppings—tomatoes, garlic, onion, and green onion—on top, then sprinkle with pepper and a little salt to taste. It is now ready to fry.
Fry until the desired texture and color are achieved.
You can make your own sauce, such as ketchup, soy sauce with lemon or calamansi, and soy sauce with a little vinegar. Rice and eggplant make the perfect pair. Yum!
