Whenever we run out of ingredients in our refrigerator, this dish always saves me from overthinking what food I should cook. My mom always buys a bulk of eggs whenever she goes grocery shopping, eggs never miss our shopping list.
Sometimes when I am alone at home and they all go out, my always go-to food I love to cook is Sauteed Tomatoes and egg, sometimes frying egg is kind of tiring to eat, this is my go-to, easy-to-cook food.
So easy, and all the ingredients are always in our fridge or pantry. This is healthier than frying an egg alone, and you can eat a lot of it. I love to cook it dry rather than watery, just like my brother cooks it. I don't know if it takes away the savory flavor of it.
Ingredients and Prepping:
- 4 Eggs
- 1/2 tsp. All-In-One Seasoning
- 3 tbsp. Cooking Oil
- 10 Tomatoes
- 4 Red Onion
- 4 Garlic
- 1 tsp. Fish Sauce
- 1/4 tsp. Ground Pepper
- 1/2 tsp. Chili Flakes
The Process:
Beating Eggs and Adding Seasoning:
In a bowl, I cracked 4 eggs and then I added about a 1/2 tsp. of all-in-one seasoning.
Whisk the egg using a fork until well combined. Set it aside.
Sauteeing The Aromatics and Tomatoes:
In a hot pan, I added 3 tbsp. of cooking oil.
After that, I added the chopped tomatoes into the pan. What I do is I keep mixing the tomatoes until they cook.
To make the tomatoes get the texture mushy fast, I mash them with the back of the steel spatula, just keep mixing them until they get to the texture I like.
After that, I added the aromatics like garlic and red onion.
Then I cook them for about a minute or until the aroma comes out.
Adding the Eggs and Seasoning:
After that, I added the scrambled egg I had whisked earlier.
Let it sit in the pan for about 10 seconds, and then I brutally mix it until well combined, and make sure the fire is high for a better texture of the egg and tomatoes.
While the tomatoes and egg were still half-cooked, I added a teaspoon of fish sauce. Mix the tomatoes and eggs until well combined.
Then I added a 1/4 tsp. of ground pepper. Makes the aroma of the food better, and it makes the taste of it better too.
We love spicy food, so I added 1/4 teaspoon of chili flakes.
Mix them until well combined or until all the moisture of the tomatoes mostly evaporated.
Serve and Plate:
Serve hot and plated.
