When it comes to iron-rich recipes, many people probably think of liver dishes, right? And for those who are hesitant to handle pork liver due to its strong smell, don't worry! Cleaning and preparing pork liver is actually quite easy, and it can be used in many delicious dishes. In this post, I'm happy to share a recipe for Stir-Fried Pork Liver with Garlic and Black Pepper that's tender, flavorful, and free of any strong odor. It's a perfect match with hot rice. Let's get started!!



📌 Ingredients and Seasonings

  • 300 grams of pork liver
  • 1 clove of garlic
  • 2 teaspoons of black peppercorns
  • 2 tablespoons of oyster sauce
  • 1 tablespoon of fish sauce
  • 1 teaspoon of sugar
  • 1 teaspoon of pork seasoning powder
  • 2 tablespoons of stir-frying oil
  • Chopped spring onions and red chili peppers, sliced ​​diagonally for garnis.



Preparation of ingredients

  • Preparing the pork liver :
  • Cut the pork liver into desired sizes and place it in a bowl. Sprinkle cornstarch (I used cornstarch) or other types of starch over the liver, then mix well. The starch will absorb the blood, which is the main cause of the strong smell. Mix until the starch is wet and soggy. Then, rinse the liver with clean water several times until the water runs clear and the liver changes color slightly. Finally, place the liver on a strainer to drain excess water.


  • Preparing Garlic and Black Pepper :

  • Peel the garlic, then wash it thoroughly. Pat dry, then pound or chop it (not too finely). Set aside.

  • Wash the peppercorns and pat them dry. Pound them and set aside.



Cooking time

  • Heat the pan over medium heat, add oil. When the oil is warm (not too hot), add the garlic and Stir continuously until the garlic turns crispy and golden. Remove some for garnish.


  • Increase to high heat, then add the pork liver, followed by black pepper. Stir-fry briefly.


  • Season with oyster sauce, fish sauce, sugar, and seasoning powder. Toss everything together until well combined.


  • Taste and adjust seasoning if needed. Turn off the heat.


  • transfer to a plate, and garnish with the reserved fried garlic, sliced green onions, and red chili slices. Serve immediately.
