Hello my Dear ASean Hiver’s! Hi Justinparke and to all, especially to food lover’s here. For today’s blog let me share with you all my eldest daughter and I version of Chicken Pork Adobo.

Chicken Pork Adobo is considered the national dish in the Philippines. The most famous and favorite recipe in the Philippine cuisine where meat is marinated and simmered in a sauce like soy sauce, vinegar, oyster sauce, ,garlic,onions,bell pepper, bay leaves, ground pepper and salted black beans.
Adobo is considered the national dish due to it’s cultural significance,widespread popularity and versatility,reflecting Filipino resourcefulness and culinary history.
By the way,Let me introduce to you all my 14 year’s old eldest daughter who is a foodie lover and loves to cook too. She was six years old when I taught her how to cook Rice ,As you know Filipinos love to eat rice 3x a day and that is breakfast, lunch and dinner. Slowly I taught my daughter how to cook different dishes because she was eager to learn about cooking. She keeps watching me how I do the cooking and she also memorized her favorite dishes, especially her number favorite Chicken Pork Adobo. She asked me to cook this last Tuesday and I told her that we would cook together but because we are on lent season we cannot eat meat during Tuesday’s and Friday’s. So yesterday was Thursday I told her that we would cook Chicken Pork Adobo for Lunch but I would first go to Sm supermarket to buy Pork and Chicken meat also Bell pepper and salted black beans. The rest of the ingredients are in our home already.
When I arrived at the SM Supermarket , I did look at the prices and I compared the prices in the wet market where I used to do my marketing of meat. Then I found out that the meat here in SM is all cheaper and fresh compared to the wet market. I get all that I need and put it into my basket and pay the cashier. I go back home and told my eldest daughter to wash well the meat and the spicies then I take rest for my arms are tired from driving our Honda Beat scooter our source of transportation. While I am resting I instructed my eldest daughter that after she washes the meat and the spicies she would prepare the ingredients for Marinating the meat.
CHICKEN PORK ADOBO Recipe
Ingredients
½ kilo Chicken cut into cubes
½ kilo pork lean meat cut into cubes
7 cloves garlic
2 pcs onions medium size
1 pc of red bell pepper medium size
½ tablespoon of ground pepper
5 pcs bay leaves
2 tablespoon of cooking oil
1 sachet of small oyster sauce
1 sachet of small black beans
100 ml Soy Sauce
50 ml vinegar
PROCEDURE:
*Wash the Chicken and Pork meat well.
- put in a colander or any container that can drain the excess remaining water.
Prepare to marinate the meat.
In a container put all the meat
Add the ground pepper
Add the soy sauce
Add the vinegar
Add the oyster sauce and Bay leaves.
MIX WELL
Marinate the meat for one hour,occasionally mixing it to distribute well and let the marinade absorb the meat.
PREPARE TO SAUTE
*Wash well all the spicies
- Remove the garlic and onions skin
- In a chopping board,sliced and chop the onions,garlic and red bell pepper.
*In a pot,Add the two tablespoons of cooking oil.
- when the oil is hot,Add the chop onions wait until golden brown
*Add the chop garlic wait until golden brown
*Add the chopped red pepper then mix.
- wait for five minutes.
- Add the marinated meat , Chicken and pork.
*Add the Salted Black Beans
- Mix well then cover the pot .
*Let it simmer for about ten minutes then Add the remaining marinated sauce.
- Mix well by using a wooden ladle, Cover it.
- Simmer for one hour or until the meat is tender.
*Taste it, if you think the soy sauce needs to be added then you can add it but little by little until you reach your desired taste. Cover till it's tender.
- Our CHICKEN PORK ADOBO is ready to serve.

In every Filipino celebration's Adobo is always present or it is always in the table so don't wonder why it is famous and considered the National Dish.
My eldest daughter and I do the cooking together. I enjoyed our time together because we both love to eat and cook.Had you heard about the saying that says (Cooking is like love. You should always season with a generous amount of heart).Any dish that is cooked with love is proven yummy but if you cook or when you are cooking and you're not in a good mood your dish would turn sour ,salty or no taste. Even in cooking it still needs a heart, a heart that loves to cook and loves to feed especially those people that we love. For me cooking is an act of love not just a simple job but a job that needs love to do it and result in yummy dishes.
