In my country, meatballs are a popular. But now they are labeled as unhealthy food sadly. This is because commercial meatballs currently contain a lot of flour, preservatives, and are also high in salt for the broth seasoning. It is very unfortunate because meatballs themselves can actually be a highly nutritious food.
It started with meatballs that can be frozen food and extend the shelf life, which makes people finally choose to buy ready-made meatballs. And unfortunately, many irresponsible parties then make meatballs unhealthy and only produce foods high in salt and fat.
That's why, now I prefer to make homemade meatballs, even those without flour, so they are healthier. Since I paid attention to my protein intake for me and my husband, I have seen more variations of menus from chicken breast ingredients.
This time, I will make meatballs but from chicken breast instead of meat. Since I don't have a blender or food processor at home, I bought ground chicken breast.
For the gravy, I only used onion flavor and mushroom powder to enhance the flavor. Then, I added Chinese cabbage for the gravy vegetable filling. You can use any vegetables you like for the gravy filling.
THE INGREDIENTS
- 250 grams of ground chicken breast
- 3 tablespoons of cornstarch
- 1/2 teaspoon of salt
- 1/2 teaspoon of ground pepper
- 1/2 teaspoon of coriander powder
- 2 eggs
Gravy Ingredients
- 800 ml of water
- 3 tablespoons of cornstarch
- 1/2 teaspoon of salt
- 1/2 teaspoon of ground pepper
- 1/2 teaspoon of coriander powder
- 5 cloves of garlic
- 5 cloves of shallots
COOKING INSTRUCTIONS
Step 1
I prepare the spices for the gravy first. I put garlic and onion together then I crush the garlic and shallots until they become puree. Then, set aside while waiting for the chicken meatball mixture.
Step 2
In a large bowl, add ground chicken, 2 eggs, with salt, ground coriander, and ground pepper. Mix well with just a spoon.
Step 3
After adding the eggs and spices, then add the cornstarch. Mix well again.
Step 4
Start heating a little oil to saute the onion puree. After the onion puree becomes fragrant, saute it, then add 800 ml of water. Bring the water to a boil.
Step 5
Prepare two spoons to form the chicken meatball mixture into balls. After the water boils, then form the meatball dough using a spoon, put it into the boiling water.
Later, the meatball dough will float to the surface of the water by itself. The chicken meatballs that have floated indicate that the meatballs are cooked.
Step 6
Next, add salt, pepper, coriander, mushroom powder, also Chinese cabbage, or whatever vegetables you use. Cook for about five more minutes or until the vegetables are cooked.
Serve while the dish is warm. You can serve these chicken breast meatballs with rice, or you can combine them with potatoes.
THE RESULTS
Chicken breast meatballs without all-purpose flour can be a high-protein dish option. Instead of buying meatballs with full-fat meat, we can replace them with chicken breast which is low in fat and high in protein.


Indeed, making healthy food requires a little energy and sometimes we are lazy to do it. But once we get used to it, maybe the taste of food out there will never be the same again and homemade dishes are always the winners.
