Making a fluffy chopped pancake (Kaiserschmarrn) with blueberries

Today I was completely craving for some sweet food so I decided to make a fluffy chopped pancake, since I still have a lot of blueberries (that I collected last summer with my father) in the freezer I decided to spice things up a bit and also added the blueberries to the pan. I don't know why I am craving for sweet food so much at the moment, I know it is not the best since I want to loose some weight that I accumulated over the winter now but some things are too good to resist.

Ingredients

  • 3 large eggs, divided, wipped eggwhite
  • 3 Tablespoons unsalted butter, melted
  • 1 teespoon vanilla extract
  • 2 Tablespoon sugar
  • 1 pinch of salt
  • 1 cup all-purpose flour
  • 1 cup milk
  • sparkling mineral water
  • blueberries amount depending on your liking

First devide the eggyellow from the eggwhites, then add the milk and vanilla exctract salt and flour to the eggyellow and mix it together. Mix the Eggwhites so it becomes stiff and fluffy in a different container.

Now carefully mix the fluffed Egg white with the dough and the blueberries and add the sparkling water. Heat up the butter in the pan untill it is molten. Then add the mixture into the pan. Slowly turn it with the Spatula and cut of smaller pieces. Cook until all the dough is solid. Kaiserschmarrn is a traditional Austrian sweet dish that is often served as a dessert, and togehter with the blueberries it tastes like heaven.
