Just when I think life can't get anymore wild, it does. When I say that I haven't stopped moving since March 16th, I mean it. I don't even know how many days ago that was, I just know that I have done A LOT during that time.
I have traveled through Arizona, Texas, Oklahoma, and Arkansas. I visited a 300 year old monastery, a defunct missile silo, an azalea festival, countless local curiosities, stayed in the most haunted hotel in the country (yes things occurred, some hysterically hilarious), and ate the absolute best food I have ever eaten in my life.

I have countless photos and stories for blog posts. I have done full time college course work throughout it all, and my friends, I am just getting started. Next Sunday I get on a plane and head to Switzerland. And France. There's already some epic adventures lined up there with some pretty interesting people. I'll write more about that later.
Right now though, as I sit here digesting my crawfish etouffee and smoked boudin balls, I'm in a dual state of awe and I really need a few more naps. Throughout this whole week I walked at least five miles a day, often 8-10, and still managed to finish my assignments, I have to say my brain is a bit fuzzy.
But that also could be from all the glorious cuisine I have ingested. I love the South for that tidbit alone. Their doughnuts are supreme!

I have a dear friend who is from Louisiana who instructed me to get a boudin kolache. This intrigued me as I knew what a kolache was, a yeast dough fruit filled pastry of Central European origin. That we took that dough and filled it with a perfectly spiced rice and sausage filling has made my tastebuds jubilant I tell you!
So maybe it's a good thing I am walking, I have been trying and enjoying all of the regional delights!
Today though, today I am resting. Okay, I am walking down the street to this groovy local tea shop and will meander through the Tyler, Texas rose garden, but I mean, come on, it's roses and iced tea! Nothing stressful about that!
I then will take the first couple days of my supposed Spring Break and do all of next week's school so I can be school free on my week long European adventure. Of course it's the most Kat-like thing to pack my first foray into the South with a my first foray into Europe.
I guess when you think about it, that actually makes sense😉

And on that note I am going to bolt. I shall attempt to throw in a few more posts here and there before resuming my hopefully more normal posting schedule once I return to Idaho/Montana around the middle of April, There's lots of funny things to write about, such as the Poo Ghost and my Tesla cubby hole. And a whole host of things I can't even mentally summon right now.
You all have been missed!
