Do you know that almost every occasion, "Maja Blanca" is a staple at Filipino gathering, especially during Christmas and New Year, Town Fiestas, Birthdays, Potlucks and family reunions, or even just normal days? Yes, you heard it right. Since I am fond of cooking and preparing desserts, every time there is an up coming special occasion, my family and friends would kind 'a request me to make this dessert. That is why I could say that this is really my "specialty" when it comes to making desserts.
A Maja Blanca is a classic Filipino dessert usually serve in almost all occasions. It is often called "coconut pudding". Its name comes from Spanish (due to colonial influence) "Maja" which means a type of custard and "Blanca" means white - a nod to its light and milky appearance. The main ingredients of this dessert are coconut milk, cornstarch and sugar, often topped with "latik" (toasted coconut milk curds) or, sometimes, grated cheese.
Maja blanca's is chilled before serving. Its texture is creamy and smooth. It is mildly sweet, with a subtle coconut flavor, and often has sweet corn kernel mixed on.
Alright, so now I'm gonna share with you my "secret" on how do I cook " Creamy Cheesy Maja Blanca".
Here are my selected Ingredients:
1 pouch ( big) Coconut milk - the star of the dish, giving it a rich and creamy flavor
1 cup cornstarch - to thicken the mixture
2 cups of water (drinking)
1 can (big) evaporated milk - for a creamier and richer texture
1 cup condensed milk - for sweetness
1/4 cup cheddar cheese - for a salty sweet taste
1 spoonful of butter - to avoid stickiness in the pan
A pinch of salt - as a neutralizer
1 tbsp. cheese powder - for flavor and vibrant color.
1/2 can or Sweet corn kernel - for added texture and mild sweetness.
Here are the step by step procedure:
- Before anything else, grease all the containers with cooking oil to prevent sticking.
- In a pan ( without heat ), mix all the dry ingredients: 1 cup cornstarch, a pinch of salt, and cheese powder for extra flavor.
- Pour in 2 cups of water and mix well until all the cornstarch is fully dissolved.
- Pour the coconut milk (1 pouch) and evaporated milk into a pan. Mix.
- Add 1 cup of condensed milk and mix well.
- Bring the pan with a mixture to a boil. Start with high heat.
- Stir continuously to prevent the mixture from sticking to the pan.
- When the mixture becomes sticky, reduce the heat to medium and continue stirring.
- Add 1/2 can Sweet corn kernels to the mixture.
- After a few minutes, add 1 tablespoon of butter to the mixture.
- Turn off the heat, then add some cheese cubes.
- Immediately transfer the mixture into your prepared container.
- Let it cool at temperature for 1-2 hours, then refrigerate for another 1-2 hours until fully set.
- Cut into squares and enjoy chilled!
