



Puerto Princesa, you have completely stolen my heart... and absolutely ruined my diet! 🌴☀️
Just touched down in Palawan and had the absolute honor of sitting down with the outstanding school division officials of Palawan and Puerto Princesa. You know what they say: serious strategic thinking requires serious brain food! 🧠✨
For lunch, we headed over to Ka Joel Resto, and let me tell you, the ocean basically emptied itself onto our table. We feasted on the ultimate bounty of Palawan’s waters! We had Lato ng Cuyo (nature’s salty, oceanic popping boba), grilled stuffed squid that was practically bursting at the seams, mountains of sweet shrimps, glorious crabs, and a perfectly steamed Lapu-Lapu. Honestly, with that much fresh seafood, I’m pretty sure our IQs doubled right there at the table. 🦀🦑🐟
Because apparently, we hadn't eaten enough, dinner took us to the legendary Kinabuch. If lunch was a tribute to the sea, dinner was a love letter to traditional Filipino comfort food. We went all out with Crispy Pata so crunchy the whole restaurant could hear every bite, perfectly grilled tuna, savory dinakdakan, classic pansit (for long life and even longer policy discussions!), and that perfectly tangy-spicy sinuglaw. 🍖🔥
I came here to collaborate with some of the best minds in education, but I think I just got absolutely schooled in the art of Palawan dining. My pants are definitely tighter, but my heart (and stomach) is so full! Until the next feast, Puerto Princesa! ✌️✈️
