Para el fin de semana, me invitaron para una evaluación de dulcería criolla venezolana. Luego de una semana intensa en todos los sentidos tras el terremoto, acepté porque este tipo de evaluaciones nos conecta con nuestras raíces gastronómicas y, luego de días emocionalmente fuertes, ha sido una de las evaluaciones más especiales en la que he estado. Por supuesto que otras han sido muy buenas, incluso con mejores decoraciones, pero para esta lo emocional estuvo muy presente.
This weekend, I was invited to a tasting of traditional Venezuelan sweets. After an intense week in every sense following the earthquake, I accepted because this kind of tasting connects us to our culinary roots, and after such emotionally charged days, it turned out to be one of the most special tastings I’ve ever been to. Of course, others have been very good—even with better decorations—but for this one, the emotional aspect was very much present.

Cada uno de los alumnos presenta cada plato típico de cada región con mucho amor, con sentimiento, sin dejar nada de lado. Se esforzaron en cada emplatado, en cada preparación. De verdad que el ambiente era un ambiente desde lo sentimental por todo lo que estaba pasando y, de alguna manera, se sentía la gratitud por esa herencia gastronómica tan amplia que tenemos en Venezuela.
Each student presented a traditional dish from their region with great love and passion, leaving no detail overlooked. They put their all into every plating and every preparation. The atmosphere was truly heartfelt because of everything that was happening, and in some way, you could feel a sense of gratitude for the rich culinary heritage we have in Venezuela.

Era imposible no tener un nudo en la garganta al hablar sobre las tradiciones de mi país. Particularmente, siempre me emociona hablar de mi gastronomía, pero luego del terremoto y ese ambiente de silencio y tristeza que actualmente rodea al país, poder reunirme con personas que sienten pasión por la comida y con un tema tan emblemático, hizo que valiera el esfuerzo el salir de ese desequilibrio luego de tanto movimiento y poner los pies firmes.
It was impossible not to get a lump in my throat when talking about my country’s traditions. In particular, I always get emotional when talking about my country’s cuisine, but after the earthquake and given the atmosphere of silence and sadness that currently surrounds the country, being able to come together with people who are passionate about food—and to discuss such an iconic topic—made it worth the effort to find my footing again after so much upheaval.


Con cada evaluación yo me he vuelto un poco más estricto, pero no en un mal sentido. Si corrijo una preparación, también doy las indicaciones para mejorar y múltiples ideas para que se practique. Pero en esta evaluación quedé sorprendido del corazón que le pusieron a cada preparación. No les voy a mentir, los estudiantes quieren aprender más pastelería internacional que la dulcería criolla venezolana, y siempre se nota en este tipo de presentaciones, pero esta vez fue todo lo contrario.
With each evaluation, I’ve become a little stricter, but not in a bad way. When I grade a project, I also provide feedback on how to improve and offer plenty of ideas for practice. But in this assessment, I was surprised by the heart they put into each project. I’m not going to lie—students generally prefer to learn more about international pastry arts than traditional Venezuelan sweets, and that usually shows in these kinds of presentations, but this time it was the exact opposite.


Aunque había cosas que corregir, me encantaron todos los sabores, aromas y texturas presentes en esta evaluación. Los emplatados tricolores, si bien podían no ir con los colores y sabores de la preparación, sí que mostraban el sentimiento del alumno y ese orgullo de ser venezolano. Independientemente del país y las situaciones, conservar las tradiciones nos permite mantener los pies donde deben estar.
Although there were things that needed improvement, I loved all the flavors, aromas, and textures featured in this evaluation. The tricolor plating—while it might not have matched the colors and flavors of the dish—did convey the student’s passion and pride in being Venezuelan. Regardless of the country or the circumstances, preserving traditions allows us to keep our feet firmly on the ground.
