Pasta alla gricia, a typical recipe from Lazio.( ENG/ESP)

Good morning Hivers how are you? Today I take you on a culinary journey with a typical Lazio recipe, part of the poor and simple tradition, a dish that always has its charm despite its simplicity.
This pasta is considered the simplest version of the classic Amatriciana which adds tomato sauce to the recipe.

Let's start with the ingredients:

  • 150 grams of spaghetti
  • 180 grams of lard
  • 100 grams of grated pecorino
  • 4 tablespoons of salt
  • 4 tablespoons of pepper

First we prepare the pot for the spaghetti with water and salt, then we take care of the lard which we cut into medium or fine sized strips as desired.

Buenos días Hivers ¿cómo estás? Hoy os llevo a un viaje culinario con una receta típica del Lacio, parte de la tradición pobre y sencilla, un plato que siempre tiene su encanto a pesar de su sencillez.

Esta pasta se considera la versión más sencilla de la clásica Amatriciana que añade salsa de tomate a la receta.

Empecemos por los ingredientes:

  • 150 gramos de espaguetis
  • 180 gramos de manteca
  • 100 gramos de queso pecorino rallado
  • 4 cucharadas de sal
  • 4 cucharadas de pimienta

Primero preparamos la olla para los espaguetis con agua y sal, luego nos encargamos de la manteca de cerdo que cortamos en tiras de tamaño mediano o fino según se desee.

Then we prepare a large pan where we will then add the spaghetti, put the lard in it, there is no need for oil because the lard will melt as a perfect sauté, when the water boils we throw in the spaghetti and cook them for the necessary time, when they are ready let's drain them and leave aside about 60 ml of cooking water, put both the water and the spaghetti in the pan together with the lard and cook over a low heat for about 7 minutes, stirring often, when the water will have been absorbed, slowly add the pecorino, continuing to mix for about another 5 minutes.

Then at the end of cooking we sprinkle the spaghetti with pepper and mix. This way we will have our good Gricia pasta, perfect to enjoy with a nice glass of red wine.

Luego preparamos una sartén grande donde luego agregaremos los espaguetis, le ponemos la manteca, no hace falta aceite porque la manteca se derretirá quedando un salteado perfecto, cuando el agua hierva echamos los espaguetis y los cocinamos para tiempo necesario, cuando estén listos los escurrimos y reservamos unos 60 ml de agua de cocción, ponemos en la sartén tanto el agua como los espaguetis junto con la manteca y cocinamos a fuego lento durante unos 7 minutos, removiendo con frecuencia, cuando Cuando se haya absorbido el agua, agregue lentamente el pecorino y continúe mezclando durante unos 5 minutos más.

Luego al final de la cocción espolvoreamos los espaguetis con pimienta y mezclamos. Así tendremos nuestra buena pasta Gricia, perfecta para disfrutar con una buena copa de vino tinto.
