My grandkids requested I make applesauce for them. It is one of their favorites to have and they especially crave it when feeling under the weather. Since the farm markets have this year's apples all picked, I went on a quest to get a nice variety.
The first farmstand I went to had large bags with a baking mix which would be perfect for the applesauce.
It took a bit of time to get them all washed and ready for peeling. I got four large bags of apples and as it turned out I would have had enough with three. I believe they amounted to almost 2 bushels and it took me two different days to get most of them canned.
By the time I was finished peeling one of the bags, my wrist was bothering me so much that I had to take a break from processing them for a few days.
I save all the skins and cores for the critters that visit the backyard. We saw this fellow having a snack on the scraps we tossed onto the compost pile.
After I finally finished making the applesauce for the children, and of course my husband, I had enough to get them through the year. Hopefully, it lasts them until the next apple season. I ended up with 24 1/2 pints and 19 pints of applesauce for the pantry shelves.
I still had almost a full bag of apples and decided to mix up a diced apple pie mixture with these ingredients. I did not measure the spices but just sprinkled them onto the apples along with some sugar and flour to coat them.
I put approximately 1 1/2 - 2 cups of the apples onto a baking sheet and froze them for 24 hours.
Once, frozen, I vacuumed-sealed the diced apples and dated the bag. I will use these for different baking recipes over the winter months. I finally got through all 4 bags and will not make that mistake again next year. That was way more apples than I needed. ;-)
