FOODlog #1339: Salted Egg Fried Chicken Mantao Burger

Had a guest shift from China during the Chinese New Year period this year. Use the opportunity for staff meal to do the R&D for a dish I had in mind for the event.

Made this Mantao Fried Chicken Burger with salted egg sauce. For this salted egg recipe, I used a recipe from my business when I was running a burger restaurant.

Marinated the chicken with Paprika, black pepper, salt, and oil. Left it to marinate overnight for the boneless chicken thighs to absorb the marinate fully before deep frying them with a seasoned flour mix till golden brown.

It's a really lush and thick version of a salted egg sauce that's perfect for a burger and paired really well with this Mantao burger and fried chicken. The chicken was juicy, Mantao bun was soft and fluffy and the salted egg sauce just making the burger such a flavorful and delicious mouthful.
