FOODlog #1367: Beef & Beetroot Stew

Made a beef stew with beetroot some time back for our staff meal dinner. I used beef topside which is the most affordable cut of beef you can find. Although it doesn't have much fat and more on the lean side of cuts but if you want to have a delicious stew and are on a budget, topside is the way to go. If you'd like a pricier cut, you can go for the shin or beef cheeks which would be excellent for this stew.

I cut the beetroot into roughly the same size as the beef and cook everything in a pressure cooker together with carrots and celery, tomato paste and garlic, and some bayleaf.

The beetroot holds up really well eventhough its cooked in the pressure cooker, and still maintains its bite which goes really well with the rich stew.

I had this on its own as I'm watching my carbs intake but you could have this with rice, potatoes, or bread.

An all in one pot meal that's easy to prepare and super satisfying.
