I made this a month ago and it turned out so good. Although in my recipe I don't really put them on the fridge and definitely no gelatin too. I think gelatin keeps the texture a lot firmer just like yours.

Well, I like this version because it is very easy to make, it is also very light and the gelatin plays an important role so that, as you say, the Flan can stay firm.
