Firey Peach Salsa - by Sunscape

It is time to restock the pantry with a few jars of salsa. Today, I'm sharing one of my favorites; Firey #Peach #Salsa. It is absolutely delicious and I am sure you will love it too.

Firey Peach Salsa

6 cups peeled, diced, under-ripe peaches
1 cup sugar
1 cup chopped red bell pepper
1 cup apple cider vinegar
1/2 cup chopped red onion
1/2 cup water
1/4 cup bottled lime juice
1/4 tsp. kosher salt
2 jalapeno peppers, seeded and finely chopped
2 garlic cloves, minced
1 habanero pepper, seeded and minced
1/4 cup chopped fresh cilantro

Place the peaches into boiling water for 2 minutes, remove them, and place them into a cold water bath. Peel and remove the pits, then chop them into chunks.

Combine all the ingredients in a large saucepan, except the cilantro. Bring to a boil over high heat, stirring until sugar dissolves. Reduce the heat, and simmer uncovered for 5 minutes. Remove from the heat and stir in the cilantro.

Fill your hot jars with the salsa to a 1/2" headspace, clean the rims, and put on the two-piece caps. Place the jars in a water bath canner and boil for 10 minutes.

This was a great way to use some of the sweet and hot peppers from last fall's harvest. Before long I will be picking a lot of peppers from the garden to freeze. These jars are so pretty and look great on the #pantry shelf.

You will certainly enjoy this spicy-sweet salsa all year long, I know we do in our household.

This is an interesting combination of sweet and spicy salsa! Why do you use unripe peaches instead of slightly ripe ones? I know if too ripe the peaches would become mush but peaches taste sweeter as they soften.

The peaches are just under-ripe, firm and not soft at all. Just so they stay somewhat firm during processing. The peaches are still very sweet, Nina. ♥

These jars look so colourful and are packed with goodness for the body. Thanks for sharing your wonderful recipe. But we don’t have peaches here.

You could substitute one of your sweet fruits instead of peaches, I bet it would be good just the same.
