It is time to restock the pantry with a few jars of salsa. Today, I'm sharing one of my favorites; Firey #Peach #Salsa. It is absolutely delicious and I am sure you will love it too.
Firey Peach Salsa
6 cups peeled, diced, under-ripe peaches
1 cup sugar
1 cup chopped red bell pepper
1 cup apple cider vinegar
1/2 cup chopped red onion
1/2 cup water
1/4 cup bottled lime juice
1/4 tsp. kosher salt
2 jalapeno peppers, seeded and finely chopped
2 garlic cloves, minced
1 habanero pepper, seeded and minced
1/4 cup chopped fresh cilantro
Place the peaches into boiling water for 2 minutes, remove them, and place them into a cold water bath. Peel and remove the pits, then chop them into chunks.
Combine all the ingredients in a large saucepan, except the cilantro. Bring to a boil over high heat, stirring until sugar dissolves. Reduce the heat, and simmer uncovered for 5 minutes. Remove from the heat and stir in the cilantro.
Fill your hot jars with the salsa to a 1/2" headspace, clean the rims, and put on the two-piece caps. Place the jars in a water bath canner and boil for 10 minutes.
This was a great way to use some of the sweet and hot peppers from last fall's harvest. Before long I will be picking a lot of peppers from the garden to freeze. These jars are so pretty and look great on the #pantry shelf.
You will certainly enjoy this spicy-sweet salsa all year long, I know we do in our household.
