The tomatoes are producing heavily now and this week I canned three batches for the #prepper pantry.

Cutting them in half to remove the seeds and roasting them in the oven to easily remove the skins.

It is so nice to have #organic tomato sauce on the shelves to enjoy in different recipes throughout the winter.

This sauce has onion, garlic, and basil added to the tomatoes.

The first of the three batches cooling down before adding them to the #pantry.

SUNSCAPES CARIBBEAN HOT SAUCE

3 orange or yellow jalapeno peppers
3 cups. yellow bell peppers
1 cup chopped habaneros with seeds (5-6)
1 cup chopped onion
1 cup chopped, peeled mango
1 cup diced pineapple
3 cloves of garlic chopped
3/4 cup apple cider vinegar
1/4 cup water
1/4 cup lime juice
2 Tbsp. brown sugar
2 Tbsp. coarse sea salt
1 tsp. orange zest
1 tsp. ground ginger
1/2 tsp. allspice

I planted six Habanero pepper plants in the tower garden this spring. They are now full of peppers and it was time to make hot sauce. This batch was done with peppers that were still in the freezer so I used them up before adding new ones to the freezer.

After blending all the ingredients in a blender, add the pepper mixture to a pan bringing it to a boil. Then simmer for 10 minutes over medium-high heat until the ingredients are soft.

Process in a water bath canner for 15 minutes.

This sauce is spicy, sweet, and very hot, not for the faint of heart. Perhaps, if you leave out the seeds from the peppers it may have less heat. This batch came out so hot that I had a hard time with it.

DILL PICKLES

I got some decent-sized cucumbers last month so I got three pints of dill pickles done. We don't eat pickles very often so this is all that I will do for the pantry.

HERB POTATOES

I love having potatoes on the shelf for those nights when a quick meal is in order. They are fully cooked and just need to be heated through. I also like to add them to soups towards the end of the cooking time.

One of these days I will have to list what I have put up this season. It takes me forever to keep up with writing posts while doing all the preserving. Today, another round of tomato sauce is on the books to get done.

After nurturing through the summer another home happy with bountiful garden. Now to preserving for winter, bon appetite it all looks excellent. Nice recipes to try from this side now.

I have yet to try sun-drying tomatoes but I do love their flavor. ♥

Preparations for the rainy day... Aha, the winter days. The tomatoes sauce containing onions, garlic and basil would definitely make a delicious addition to any meal.
