Tepache - Mexican Fermented Pineapple Drink - by Sunscape

This is the first time I'm making "Tepache" which traditionally is made with the core and rind of fresh pineapple.

Tepache Recipe

1 cup sugar
1/2 gallon jar
6 cups distilled water
1 or two 3" cinnamon sticks
4 whole cloves
1 fresh pineapple

Whenever I make anything #fermented I always use distilled water. Many people use filtered or spring water but this is what I use.

Place 4 cups of water and the sugar into the jar stirring until it dissolves. Then add the cinnamon and cloves.

Wash the pineapple well with cold water. Cut off the crown and a thin slice from the bottom of the pineapple. Slice the skin off the pineapple with a sharp knife until all sides are off.

Cut off the fruit in sections around the core and save the fruit for another use. Cut the core into chunks and add them with the skins to the prepared jar.

Add the remaining two cups of water to the jar leaving a 1" headspace. Cover the jar with a clean cloth and secure it with a rubber band. Place it on the counter for 24 hours to allow time for #fermenting.

After two days you will see some bubbles forming in the jar which tells you the process is proceeding perfectly. If you don't, stir the solution and allow it to sit undisturbed until you see bubbling. You will also notice that the color of the water has darkened.

It only took three days for this batch of #tepache to ferment. Once it was ready I poured the solution through a mesh strainer to remove all the skins and spices.

The Tepache was now ready to drink. I was so surprised at how sweet and delicious it was. I put the drink into a glass container and into the refrigerator. I added a little seltzer water to some of the tepache for a #mocktail with a slice of pineapple.

The Tepache can be stored in the refrigerator for up to two weeks. I knew I would not use it up fast enough so I decided to freeze some of it into cubes to add to drinks later.

Benefits of Tepache

Vitamins:
The fermentation process increases the tepache's vitamin content, including vitamin C, manganese, phosphorous, and calcium which is important for a healthy immune system.

Probiotics:
It contains probiotics, which are microorganisms that can help with digestion, gut health, and the immune system. Some strains of probiotics found in tepache, like Lactobacillus and L. plantarum, may have specific health benefits. For example, Lactobacillus may help balance the gut, which can improve nutrient absorption and may lower "bad" cholesterol levels. L. plantarum may also help with diarrhea caused by E. coli infections.

Tepache is simple to make and will be done in a few days. I add it to my lemonade or plain water to drink it.

How did you come across this recipe idea? It’s a good way to use the whole pineapple. I used the top from the last whole pineapple I had to grow a huge pineapple plant that I still have.

I found it in the new Ball canning and preserving book. Then oddly enough someone posted it on tiktok so I bought a fresh pineapple to give it a go. I love it! I never tried saving the top to plant it but maybe next time. ♥

How cool! I debated about getting a new blue book, but decided to stay with the one I was used to.

The new canning book is fine but I use my original one more. Old habits die hard.

I don't know anything is wasted here, neither the heart nor the shell are saved, it's interesting by the way.

You should try it the next time you have a pineapple. It is very tasty.

I hope you take time to make it. I clean the outside of the pineapple well before slicing it up.
